Custard Filled Cornbread

Everyone loves some good BBQ, but it’s often the sides that make the meal. This super moist corn bread is a great side for anything BBQ and will keep your guests coming back for more!


2 T vinegar

3T sugar

½ t salt

2 cups milk

1 cup flour

¾ cup corn meal

1T baking powder

1/2t baking soda

2 eggs

3T butter (melted)

1 cup corn kernels

1 cup heavy cream

Preheat oven to 375 degrees. Butter an 8 inch square pan and place in oven to warm while creating batter.

Note: you will mix wet and dry ingredients in separate bowls.

Add Vinegar, Sugar, and salt to milk and set aside.

Mix flour, cornmeal, baking powder, and baking soda in a separate bowl.

Add 2 beaten eggs to the vinegar,sugar,salt and milk you previously set aside. Then add your butter.

Pour dry ingredient bowl into the wet bowl and hand whisk until combined then add your corn kernels.

Pour batter into hot pan,adding heavy cream to the center of the batter – DO NOT STIR.

Bake for 45 minutes – 1 hour. Cornbread is done when brown on top, and batter doesn’t move much when shaken (from edge of pan).
