Potatoes are always a great side with BBQ. These cast iron potatoes have a perfect crunch on bottom and all the flavor on top.
What you’ll need:
- 8-9 red skin potatoes ( this was enough for a 10 inch skillet)
- One small onion
- 2 garlic cloves minced
- Olive oil
- Big Guy Windy City Seasoned Salt
- About a table spoon of chives
Start off by sauteing the garlic and onion. Slice the potatoes as thin as possible and drizzle olive oil over them, making sure they are all coated. Then cover with seasoned salt, the garlic, onion and chives. Layer them in the pan and cook at 350 degress for about 45 minutes or until cooked. Then throw them in the broiler until brown on top.
